A Stringham family tradition - Waffles topped with ice-cream and this wonderful hot syrup!
1 cup sugar
2 cups water
maple extract (optional)
Caramelize sugar in a heavy-bottomed saucepan. Place over medium heat and cook, stirring occasionally, until the sugar turns a beautiful amber color. Be careful not to burn.
Immediately remove from heat and add 2 cups of hot water. Return to heat and bring to a boil. Boil until all the sugar is dissolved. You can use maple or vanilla extract but it is not necessary. Transfer to a heatproof container.
