2 ½ lb. red potatoes, cooked and cubed
½ pound sliced bacon, cooked and crumbled
2 cup (8 oz.) cubed cheddar cheese
2 cup (8 oz.)shredded sharp cheddar cheese
1 small onion , finely chopped
½ cup mayonnaise (do not use light or fat-free)
½ cup sour cream
½ tbsp. minced chives
½ tsp. salt
¼ tsp. pepper
In a large bowl, combine potatoes and bacon. In another bowl, combine the remaining
ingredients; add to potato mixture and toss gently to coat. Transfer to a greased 9 x 13 baking
dish. Bake, uncovered, at 325 degrees until
bubbly and lightly browned.
