These make a great
breakfast cookie.
½ cup butter
½ cup shortening
1 cup granulated sugar
1 cup brown sugar
2 eggs, beaten
1 teaspoon vanilla
2 cups flour
1 teaspoon soda
½ teaspoon baking powder
½ teaspoon salt
2 cups oatmeal, quick cooking
2 cups cornflakes, whole (or your favorite cereal)
1 cup coconut, shredded
1 cup chocolate chips
Cream together butter, shortening, and sugars. Add eggs and vanilla. Mix well.
Add in flour, soda, baking powder, and salt. Mix well.
Stir in oatmeal, cornflakes, coconut and chocolate chips.
Bake on UN-GREASED cookie sheet at 375 degrees for 10-12
minutes or until just starting to brown.
Cool immediately.
