Chocolate Marshmallow Cookies – Grandma Ellen

1 ¾ cup flour
2 eggs
½ teaspoon baking soda
½ teaspoon salt
3/4 cup cocoa powder
1 cup sugar
½ cup margarine
½ cup milk
½ cup walnuts, chopped (optional)
1 teaspoon vanilla
36 large marshmallows, cut in half

Mix flour, cocoa, baking soda and salt together.  Set aside.

Cream together butter, milk, eggs and vanilla until light and fluffy.  Add flour mixture.  Mix well.

Drop by tablespoons (or cookie scoop) onto an ungreased baking sheet, about 2 inches apart. 

Bake at 350 degrees for 8 minutes.  Remove from oven and top with a ½ marshmallow, cut side down. Return to oven and continue baking until marshmallows begin to melt (about 2 minutes).

 Cool and frost with chocolate frosting. If you start from the middle and continue to edge it frosts easier

Chocolate Frosting:
2 cups powdered sugar
4 tablespoons butter or margarine, melted
¼ cup cocoa powder
¼ cup milk
¼ teaspoon vanilla extract


Melt butter.  Dissolve the cocoa powder into the butter.  Add the powdered sugar.  Add milk and vanilla until smooth.
