3 cups pinto or navy beans
1 ham hock
1 can tomato sauce, or 1 pint canned tomatoes or ketchup
1 tbsp. salt
pepper to taste
WASH in clean water after removing any foreign objects. A colander is handy for washing the beans.
SOAK at least 8 hours (preferably 24 hours). Keep beans covered with clean water. Use no seasonings while soaking.
Drain and rinse the beans. Add triple volume fresh water and ham hock. Simmer 4 or 5 hours until beans are tender. Remove ham hock and add onions, continuing to simmer beans.
Cut off good meat and return to soup along with seasonings and tomatoes, if desired. Simmer another 30-40 minutes.
