Sweet Potato Soufflé - Aunt Cindra

3 cups sweet potatoes
½ cup sugar
2 eggs, partially beaten
½ cup butter, melted
1 teaspoon vanilla

Cook sweet potatoes.  Peel and mash the sweet potatoes.  Mix sugar, eggs, butter and vanilla.  Put in a greased 9x13 inch casserole pan. 

Make topping:
1 cup brown sugar, packed
1/3 cup butter
1/3 cup flour
1 cup chopped pecans.

Mix flour and butter together like a pie crust (mix until about the size of peas). Add sugar and pecans.


Pour topping over the sweet potato mixture.  Bake at 350 degrees for 40 to 40 minutes.
