Hawaiian Haystacks - Aunt Eve

2 cans cream of chicken soup
1 can chicken broth
Chopped chicken
Onions, chopped
Carrots, grated

Combine above ingredients in a sauce pan to make gravy. Stir to blend.  Add chicken last.  Simmer about 8-10 minutes until heated through.

4 cups long grained rice, steamed
Toppings:
1 can chow mien noodles
3 medium tomatoes, chopped
1 cup celery, diced
½ cup green pepper, diced
½ cup green onion, chopped
1 can pineapple tidbits, drained
1 cup cheddar cheese, grated
1 can mandarin oranges, drained
½ cup slivered almonds
½ cup coconut, shredded
1 jar pimento, drained and diced

Layer ingredients onto 8 individual plates.
Layer 1:  Rice
Layer 2:  Sauce
Remaining Layers:  put on the other ingredients as selected by each individual.
Top with almonds, coconut, and pimento on top.


Makes 8 servings
