1 ½ pound ground beef - brown and add:
1 onion, chopped
2 tablespoon parsley
1 can corn
1 green pepper
1 quart can tomatoes
2 tablespoons chili powder
1 can kidney beans
Salt and pepper to taste
Simmer 5 minutes.
Pour into casserole and cover with corn meal topping and bake at 350
degrees for 30-40 minutes
Topping:
Heat: 1 ½ cup milk
with 1 teaspoon salt, 2 tablespoons butter.
Stir in: ½ cup
cornmeal. Cook until thickens.
Mix in: 2 eggs,
slightly beaten and 1 cup grated cheese.
Makes a big casserole.
