Chocolate Oatmeal Cake – Aunt Jessi

Uncle Justan’s 30th Birthday Cake

1 ¾ cup boiling water
1 cup rolled oats, old-fashioned
½ cup oil
½ cup brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
12 ounces chocolate chips, semi-sweet
1 ¾ cup flour
1 teaspoon baking soda
1 teaspoon salt
3 tablespoons cocoa

Soak rolled oats in boiling water and set aside. Beat together oil, sugar, eggs, and vanilla. Add the oats that have been set aside. Add half of the chocolate chips. They will melt in the batter.

Pour into 9x13 inch greased pan. Top with the remaining chocolate chips and ½ cup chopped nuts.

Bake at 350 degrees F for 40 minutes.


Serve with whipped cream or ice-cream (optional)
