Wild Banana Drop Cookies – Aunt Jessi

1 ½ cup granulated sugar
2/3 cup shortening
1 teaspoon vanilla
2 eggs, unbeaten
1 cup bananas, ripe and mashed
2 ¼ cup flour
2 teaspoon baking powder
½ teaspoon salt
¼ teaspoon baking soda
½ teaspoon salt
1 cup chopped nuts or chocolate chips

Cream together sugar, shortening and vanilla. Mix in the eggs. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Mix dry ingredients with mashed banana.  Stir banana mixture into sugar mixture. Mix well and stir in nuts or chocolate chips. Chill in refrigerator for 30 minutes. Spoon cookie dough onto cookie sheet with a teaspoon.

Mix ½ cup sugar with ½ teaspoon cinnamon. Sprinkle over UNBAKED cookies.


Bake at 400 degrees for 8-10 minutes.
