This cake is very good made with whole wheat flour or
half white and half wheat.
2 cups flour
2 cups sugar
12 cup margarine or butter
1/2 cup shortening
¼ cup cocoa powder
1 cup water
½ cup buttermilk*
2 eggs, slightly beaten
1 teaspoon baking soda
Pinch of salt
1 teaspoon cinnamon (optional)
Mix the flour and sugar and set aside. Bring water, margarine, shortening, and cocoa
to a light boil. Pour over flour
mixture. Add remaining ingredients and
mix well.
Bake at 350 degrees F. for 30 minutes if baking in a 9x13
inch pan.
Bake at 400 degrees F. for 20 minutes if cooking in a
11x16 inch cookie sheet.
Chocolate Frosting
½ cup margarine
4 teaspoons cocoa
2 tablespoons milk
1 pound powdered sugar
1 teaspoon vanilla
1 cup nuts, chopped
Bring margarine, cocoa and milk to a boil. Add powdered sugar and vanilla. Mix until smooth. Stir in chopped nuts (optional).
*you can substitute ½ cup milk with 1 tablespoon of vinegar
left to sit for a few minutes for the buttermilk.
