Ice Cream Sandwiches – Grandma Ellen

3 ½ cup Rice Krispy cereal, toasted
1 cup flaked coconut, toasted
1 cup brown sugar, packed
1 cube melted butter or margarine
1/3 cup chopped nuts (optional)
½ gallon vanilla ice cream

Preheat oven to 350 degrees.  Spread coconut and cereal onto a cookie sheet.  Bake stirring occasionally, until just beginning to brown.  This will take about 10 minutes.  Remove from oven and let cool.  This is a better method than broiling since it can catch on fire so easily.   

Mix coconut, cereal, brown sugar and melted butter together. 

Spread half of cereal mixture onto the bottom of a 9x13 inch pan.  Gently spoon softened ice cream on top of mixture (I like to slice my ice-cream).   Use a spoon and very gently spread mixture, being careful to not lift up cereal mixture from bottom of pan.  Spread ice cream out evenly and then top with remaining cereal mixture.  Gently press top crisp into ice cream.  Cover pan with plastic or foil and chill until firm.  Cut into squares and serve.


This is really good with sliced strawberries on top to garnish.
