Pork Chops and Scalloped Potatoes - Great Grandma Velma

 5 or 6 potatoes, peeled
flour
salt and pepper
1 medium onion
Milk to cover

Dip pork chops in flour, seasoned with salt and pepper. Brown in hot oil in frying pan.
Peel and slice a layer of potatoes in 9 x 13 baking pan. Add a layer of chopped onion.
Sprinkle with flour, salt and pepper. Repeat layering until potatoes are all included. End
with flour, salt and pepper. Cover completely with milk.

Bake 1 hour at 350 degrees.

New Potatoes and Peas - Great Grandma Velma

This is true comfort food that we have had our entire lives.  It comes from Grandma Velma Tippetts Stringham's recipe file.

I 1/2 lbs.(about 15) tiny new red potatoes (or any small potato)
1 to 1/2  cups fresh or frozen peas
3 Tbsps. sliced green onions (optional)
4 tsp. butter or margarine
4 tsp. flour
1 cup milk

Scrub potatoes; pare off narrow strip of peel around the center of each. If potatoes are not that
small, cut each potato into 2, 4 or 6 pieces. Cook in boiling salted water for 8 to 15 min. Add
peas the last few minutes of cooking. Drain. Make a white sauce of butter, flour and remaining
ingredients. Combine white sauce and vegetables.

May make a larger amount of white sauce using recipe on previous page and it becomes a soup.
Grated cheese may be added.

Serves 6 - 8.

White Sauce: (each recipe makes 1 cup white sauce)


Thin White Sauce
Medium White Sauce
Thick White Sauce
1 Tbsp butter or margarine
1 Tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1 cup milk
2 Tbsp butter or margarine
2 Tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1 cup milk
3 Tbsp butter or margarine
3 Tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1 cup milk
Use for cream soups and thin cheese sauces.
Use for gravies, creamed dishes, and scalloped dishes.  You can substitute stock for all or part of the milk in meat gravies.
Use for soufflés.

Directions
Melt the butter in a medium size sauce pan.
Stir the flour completely into the butter to make a paste.
Cook over low heat for 3 minutes.
Stir continuously, don't allow paste to brown.
Whisk in milk.  Turn up heat to medium high heat and whisk continuously, especially along sides and bottom to prevent lumps.
Bring to a boil and thicken.  Take off heat.
Add cheese or other seasonings at this point, stirring until smooth.

No Fat or Low Fat White Sauce
Use when the amount of fat is less than the flour or when no fat is used. Heat about 3/4 of milk in double boiler; stir remaining milk into flour to make a smooth paste; stir gradually into hot milk; place over direct heat. Bring to a boil and cook until thickened, stirring constantly. Return to double boiler and cook 3 minutes longer, stirring occasionally.

Cornstarch White Sauce
2 Tbsp. butter or margarine
1 Tbsp. Corn Starch
1 cup milk
½ tsp. salt
1/8 tsp. pepper.

Stove Top Directions:  Combine corn starch and milk in a small saucepan; stir until smooth.  Add butter, salt and pepper.  Stirring constantly, bring to a boil and boil for 1 minute.  Stir until smooth.  Remove from heat.

Microwave Directions:  Combine corn starch and milk in a 2 quart microware-safe; stir until smooth.  Microwave on HIGH (100%) for 2 minutes; remove and stir.  Microwave 1 to 2 minutes more, or until mixture thickens and boils for 1 minute.  Remove from microwave.  Stir in butter, salt and pepper


Chocolate Bread Pudding - Great Grandma Velma Stringham

This is a family favorite that originates from Grandma Velma Stringham.  She is Grandpa Arnold's mother.  Although most of the family eats this as a dessert, the Bush family loves to eat this warm in the morning for breakfast!

4 c. dried bread cubes - about 7 slices of bread                                               
3 Tbsp. cocoa
1 cup sugar                                                                 
6 cups milk                                                                                 
4 eggs beaten slightly 
½ tsp. salt                                           
2 tsp. vanilla
1 cup chopped nuts (optional)

Scald milk.  Beat eggs slightly.  Add sugar mixed with cocoa to egg mixture.  Add milk slowly to not cook egg mixture. Add all other ingredients.  Pour into buttered baking dish.  Bake 350 for 1 hour. Do not over cook or it will be watery.  Serve with half and half cream.  Enjoy!
