English Toffee - Great Grandma Evelyn Rollins

4 cups brown sugar
1 can sweetened condensed milk
1/2  pound butter
nuts

Mix ingredients together and cook in heavy pan, stirring all the while until it forms a firm ball when added to cold water. Pour into buttered roll pan that has nuts on the bottom. Cool then cut into rectangles.  Roll individually in waxed paper or plastic wrap.

Hand Rolls - Great Grandma Evelyn

This is a recipe of Grandma Evelyn Hansen Rollins (Grandma Ellen's Mom)

3 cup white sugar

2 tbsp. corn syrup

1 cup milk or cream
1 pinch of salt
1 pinch of soda
1 tsp. vanilla

Cook sugar, syrup, milk and salt in large pan.  Add soda close to end of cooking period.  Cook until it forms a soft ball in cold water.  Cool and beat until it turns creamy.  Add vanilla during beating procedure.  Mold into balls and dip in melted chocolate and roll in chopped nuts or toasted coconut.
