Homemade Rolls - Grandma Ellen

This roll dough recipe can be used for dinner rolls, scones or cinnamon rolls.

1 cup margarine
4 eggs
3/4 cup sugar
2 tsp. salt
7 1/2-8 cups flour
2 tbsp. dry yeast
2 cups warm water

Dissolve 2 Tbsp. yeast in 1/2 cup water with a little sugar in it.  Set aside.

Cream together eggs, sugar, margarine and salt.
Add 2 cups warm water.  Then add about 3 cups flour and mix well. Add the dissolved yeast.  Mix well again.

Add 4-5 cups more flour. Add the last cup slowly so that you do not get the dough too dry.  The dough should come clean from the sides of the bowl, but still be barely sticky to touch.  Let mix for about 5 minutes or until well mixed.

Cover and let rise for 1-1 1/2 hours or until doubled.  Roll out and let rise for another hour or so.  I like mine to raise a little longer for a lighter roll.)

Bake at 350 degrees for about 12 minutes or until golden brown.  Make sure that the bottom is also golden brown.

For cinnamon rolls, I roll the dough in a large rectangle and spread with melted butter, brown sugar, or granulated white sugar, cinnamon, nuts and raisins. You can use chocolate chips in them also.  Roll up, cut with a thread.  raise for an hour or so and bake at 350 for 12-15 minutes.  Frost with cream cheese frosting.
