Ham Fried Rice - Cousin Emily

1/2 pound bacon
1 cup onions, diced
1/2 cup carrots, diced
3/4 cup celery. diced
1 small green pepper, diced
2 cup diced ham
3 Tbsp. soy sauce
3 cup rice, cooked and cooled


In large skillet, cook bacon until crisp.  Remove from skillet.  Add onions and stir fry one minute.  Add celery and green peppers and stir fry one minute.  Add ham and soy sauce.  Heat through. Break up cold cooked rice.  Stir gently into meat and vegetables.  Make sure every grain is covered with oil  Heat through.  Add crumbled bacon and serve immediately.
