Zucchini Casserole - Grandma Ellen

6 cups zucchini, peeled and sliced
1 onion chopped
1 can cream of chicken soup
1 cup sour cream
1 cup carrots, shredded
8 ounce stuffing mix

Boil zucchini and onion for 5 minutes in salted water. Drain.  Combine cream of chicken, sour cream and shredded carrots.  Fold in zucchini and onion mixture.  Mix one pkg. stuffing mix as package directs.  Spread 1/2 stuffing mix in 9x12 baking dish.  Spoon zucchini mix on top with rest of stuffing mix.  Bake at 350 for 25 minutes.
