Homemade Soup Noodles – Grandma Ellen

3 eggs, unbeaten
1 teaspoon salt
flour to make a semi-stiff dough

Mix ingredients.  Handle as little as possible but still mixing.  Roll out as thin as possible on heavily floured board.  Sprinkle more flour on top before rolling jelly roll style and cutting into noodles. A pizza cutter makes cutting the noodles very simple. Separate out each noodle and let dry.  Cook in boiling stock that the chicken or turkey has been cooked in.
