Zesty Tomato Mac ‘n Beef – Aunt Cindra

¼ pound ground beef
1 onion, chopped
1 can tomatoes with green chilies
1 cup elbow macaroni
½ cup shredded cheddar cheese
1 cup water
green onions, to garnish
sour cream, to garnish

Brown meat and soften onion in large skillet. Drain. Season with salt and pepper to taste.  Add UNDRAINED tomatoes and 1 cup water and bring to a boil. Stir in macaroni.  Cover and simmer 10 minutes or until pasta is tender.  Stir in cheese.  Garnish with sliced green onions and sour cream if desired.
