It is best to make brittle on a dry day. Humidity is not it's friend.
1 cup sugar
1 cup light corn syrup
1/2 cup water
12 ounces raw peanuts
1 tablespoon butter
1 tablespoon butter
1 teaspoon vanilla
Bring sugar, water, and corn syrup for over medium heat to a boil. Be sure to dissolve sugar crystals. Continue boiling for 15 minutes or to crack stage (295 degrees) without stirring. Add peanuts, butter and vanilla.
Pour out on a buttered pan stretching as thin as possible with a fork. Starting on edges as it cools.
Cool the brittle completely. Break into bite sized pieces.
